Oriental Flavour

Foul (Black beans) with fried vegetables

Foul is one of the most famous Egyptian Foods & have many ways to cook it

Ingredients
4       cups Black Beans ,or 2 1/2 cans  beans
3       Onions ,medium size, chopped
4       Tomatoes ,medium size
3       Green Peppers ,medium size
1       bunch Parsley ,chopped
1       Green Chili Pepper ,chopped
1       tsp Garlic ,crushed
1       tbsp Tomato Paste
1       tbsp Margarine ,or oil
         Salt and Pepper

Directions
1- Cut tomatoes into bite size cubes and cut peppers into bite size squares.
2- In a medium deep pan heat and stir margarine or oil and onions until yellow. Add garlic, parsley and pepper and cook for about 3 minutes.
3- Add chili pepper then after another minute add tomatoes and tomato paste and stir to mix well. Leave to simmer for 5 –7 minutes.
4- Add beans, salt and pepper and stir to mix beans with vegetables. Add some water and leave to cook for another 10 minutes.


Sayadiya

 

This
is a traditional Egyptian dish for the citizens of the coast. It is a
whole main dish with fish, rice and soup. The fried onions is the
secret of the recipe that gives it the taste and the brown color.

Ingredients:

1         kg Fish from any kind you prefere
3         cups Egyptian Rice (white rice)
1/4      cup Vinegar
3         Onions ,large size, finely chopped or grated
1/2      cup Vegetable Oil
           Salt and Pepper

Directions

  1. Clean and wash fish well. Cut into steaks 1.5 cm thin. You can get ready fish steaks.
  2. Fry
    onions in oil over medium heat until just brown. (Don’t over fry). Put
    fried onions in a mortar and hammer or blend in a blender or food
    processor with 2 tbsp water.
  3. Fill ¾ of a deep pan with water
    (about 8 cups) and put over medium-high heat.
  4. Add onions mixture,
    vinegar, salt and pepper and bring to boil.
  5. Add fish steaks to the pan and leave to boil for 10 minutes until fish color turns brown. Remove from pan and set aside.
  6. Put
    4 cups of onions sauce in a medium deep non-stick pan over medium heat.
  7. Wash rice well and drain.
  8. Add rice and stir until water is almost
    absorbed.
  9. Cover, move to low heat and leave to cook for 20-25 minutes.
  10. Serve
    rice in a platter and arrange fish slices on top or serve separately. 
  11. Put remaining sauce in a serving bowl and serve as soup, with multi
    kinds of salads.

Note:
You can fry fish steaks instead of boiling them in onions mixture. Only
reduce quantity of water added in step (3) to 4 cups and when it boils,
add rice and follow the rest of the steps as stated.


Oriental pizza

Ingredients

300   g Minced Meat                                       
1       Onion, Finely chopped
1       Galric Clove, Crushed                           
1/4    cup Tomato Paste
3       tbsp Vegetable Oil                                 
2       tbsb Coriander, or Parsley, Chopped
2-3    packs Yoghurt                                        
1       tbsp Lemon Juice
2       tbsp Pine Nuts                                        
1/4    tsp Cumin
1/4    tsp Cinnamon                                          
1/4    tsp Chili Powder
1       Pizza Dough                                             
         Salt and Pepper

Preparing:

  1. In
    a medium pan, heat 2 tbsp oil over medium heat.
  2. Add onion and stir
    until yellow. Add garlic and minced meat and stir for 2 minutes.
  3. Add
    all spices, cumin, cinnamon, chili powder, salt and pepper and stir
    well. Cover pan, reduce heat and leave for 10-15 minutes.
  4. Fry pine nuts
    in oil until golden.
  5. Roll dough
    on a slightly floured surface. Spread dough to cover a 30 cm diameter
    baking sheet or pizza pan or its equivalent rectangular baking sheet.
  6. Spread tomato paste over dough.
  7. Add minced meat mixture over tomato paste.
  8. Heat oven to 200-220 C. Bake pizza in oven for about 15 minutes. Leave to cool for 5 minutes
  9. Mix
    yoghurt with salt, pepper and lemon juice.
  10. Add spoonfuls of yoghurt
    mixture over pizza then sprinkle pine nuts on surface. Serve immediately
